The festive season will once again be synonymous with surprise, gaiety, and wonder. Inspired by these whimsical details, Pastry Chef Rémi Guérin has imagined a log that's colorful, flowery, and festive! For his creation, the chef chose traditional hazelnut flavors combined with bold notes of passion fruit and orange blossom.
The log, a veritable symphony of flavors and textures, consists of a crunchy cookie with a soft hazelnut center, bringing a richness of textures right from the first bite. This is complemented by a passion fruit compote, whose subtle acidity contrasts deliciously with the sweetness of a praline cream. The latter, rich and savory, wraps the palate in its irresistible sweetness. Finally, an unctuous orange blossom mousse rounds off this creation with an elegant floral touch, adding a welcome airy lightness. A true gustatory voyage, where each layer harmonizes in a perfect alchemy of textures and aromas.
